ambiental equilibrado, capaz de satisfazer as necessidades contempor\u00e2neas, sem comprometer a capacidade das gera\u00e7\u00f5es futuras de suprir \u00e0s pr\u00f3prias. Esta concep\u00e7\u00e3o caminha junto com o questionamento do estilo de desenvolvimento vigente, que possui car\u00e1ter predat\u00f3rio na utiliza\u00e7\u00e3o dos recursos naturais e gera pobreza e desigualdade social.<\/p>\n<p>Neste contexto de reflex\u00e3o socioambiental, ganha for\u00e7a a Gastronomia Sustent\u00e1vel, que utiliza ingredientes org\u00e2nicos (produzidos sem qu\u00edmicos, fertilizantes e pesticidas), sazonais e cultivados nas redondezas (o que evita que o alimento seja transportado por longas dist\u00e2ncias, reduzindo a emiss\u00e3o de poluentes).<\/p>\n<p>Seguindo essa filosofia, o chef Paulo Rodrigues ministrou o curso de Gastronomia Sustent\u00e1vel oferecido para os 32 estudantes e t\u00e9cnicos do Programa de Jovens \u2013 Meio Ambiente e Integra\u00e7\u00e3o Social &#8211; PJ-MAIS da Reserva da Biosfera do Cintur\u00e3o Verde da Cidade de S\u00e3o Paulo &#8211; RBCV.<\/p>\n<p>As aulas foram pr\u00e1ticas e tiveram algumas inser\u00e7\u00f5es te\u00f3ricas durante as atividades. Os participantes foram divididos em quatro grupos para que todos pudessem vivenciar cada etapa do trabalho: arruma\u00e7\u00e3o de mesa e buffet, como servir, prepara\u00e7\u00e3o da comida, limpeza da cozinha e planejamento do estoque.<\/p>\n<p>Todo o trabalho teve foco na sustentabilidade, valorizando o aproveitamento integral dos alimentos e a diminui\u00e7\u00e3o de gastos, evitando o desperd\u00edcio.<\/p>\n<p>O curso aconteceu no Polo de Educa\u00e7\u00e3o e Intera\u00e7\u00e3o Socioambiental, no Parque Estadual Alberto L\u00f6fgren, de 27 a 29 de julho de 2011.<\/p>\n<p>EcoReceitas<\/p>\n<p>1.
